New bar manager job created in London

A bar manager job in London has been taken up by Tristan Stephenson, who recently opened a new venue in Marylebone.

Called Purl, the establishment is a cocktail bar with a twist, serving a variety of 'bitters'.

Mr Stephenson explained to the Metro from his atmospheric basement bar that a bitters is usually made by infusing strong alcohol with tree barks, fruits and spices such as cardamom, anise and cloves.

"Angostura is the most famous. The recipe is secret but the flavour profile will tell you there's things like cloves, anise and cinnamon in it," he said.

Mr Stephenson claims that the bartending world is starting to, once again, show interest in using bitters in modern cocktails.

This extra ingredient adds something else for the tongue to detect and increases the flavours of a drink.

Earlier in the year, Trevor Watson, director at leisure property consultancy Davis Coffer Lyons, said that the central London eating and drinking market is continuing to go from strength to strength.
