Staff in chef jobs at Mark Hix's new Belgravia restaurant will be preparing an eclectic menu with an international focus, as the English chef takes a new approach to menu planning.

The chef is renowned for his unique take on original British dishes but this project, part of Thomson Hotels' Belgraves development in London, will be a departure from this format.

"We've had fun with the menu and are going off piste as I like to say, so if you're expecting my signature British style then think again," said Hix, whose five existing establishments in Dorset and London all focus on locally-sourced produce.

The 80-seat restaurant is expected to open in January of next year and will include a new outlet of Mark's Bar, named after Hix's successful project in Soho.

Thomson Hotels has branches in New York, Toronto, Washington DC and Miami Beach. This will be the luxury company's first move into the English market.
