Gourmet salad bar expands portfolio after Barclays investment

In a boost for restaurant recruitment in London, gourmet salad bar and sushi restaurant Chop'd has announced plans to open two new establishments, with the potential for further investment in the future.
By opening one business in Paternoster Square and another in Shoreditch, the company will bring its total number of businesses to eight.
Funding for the project was provided by Barclays, which said the salad bar's impressive track record in opening new outlets influenced its decision.
Stephen Cherry, relationship director in Barclays Corporate's hospitality and leisure team, said: "The fact that the business is going from strength to strength and expanding when the threat of a recession looms on the horizon is testament to their success."
Chop'd opened its first eatery in December 2005 and now sells up to 20,000 salads a week. It estimates that it has sold over 1 million of its custom-made dishes since it began serving.
