New Peruvian restaurant set for London

Chef jobs could be available in London when Virgilio Martinez opens his first establishment in the capital city, a Peruvian restaurant called Lima which is expected to seat 80 people over two floors.

A 40-seat formal dining area will be adjoined with a more relaxed bar section serving Peru's signature Pisco cocktail and an informal menu, reports Caterer and Hotelkeeper magazine.

The kitchen will be under the aegis of Robert Ortis, with general manager Gabriel Gonzales taking control of the restaurant as a whole.

Commenting on the launch, Mr Martinez said he would work with local suppliers in London as much as possible but also use Peruvian farmers to make sure the dishes are as authentic as possible.

"I want to bring some of their amazing produce here such as organic cacao, coffee, chilli, herbs and potatoes that people here in London don't know about," explained Mr Martinez.

Tito's, on London's Bridge Street, is another establishment providing the South American country's cuisine to a British audience.
