Sous chef jobs and other catering roles look likely to be among the 3,000 jobs Marstons plans to create over the next two years, after the chief executive reasserted the brewery's desire to place food at the centre of its new expansion plans.
Ralph Findlay claimed dining has been a key part of the pub industry since the smoking ban in 2007.
"Since 2005 food has gone from 25 per cent of our turnover to 42 per cent, and I think that will continue to grow," he said.
The Wolverhampton-based company expects to build dozens of new pubs over the next 24 months, with an investment of around £60 million planned.
It already operates 2,150 pubs across England and Wales and announced overall revenue of £682.2 million for 2011, a 4.8 per cent rise from last year's figures.
A report from the Coffer Peach Business Tracker found pub and restaurant sales increased by 2.1 per cent over November 2011, indicating growth in an industry that is faring well despite the economic climate.
