Wales offers 'culinary excellence'

The restaurant scene in Wales is booming as local chefs impress with their skilled preparation techniques and locally sourced ingredients, it has been reported.

In recent years, kitchen stars such as Bryn Williams, head chef at Odette's and Angela Hartnett, who famously trained with Gordon Ramsay, have helped raised the profile of Welsh food but now attention is being paid to the small restaurants that are transforming the country's gourmet landscape.

Penny Lewis, the manager of the Culinary Cottage Cookery School, told the Western Mail: "There is unquestionably an emergence of excellence in cooking in Wales and people are prepared to travel to eat here."

"Crucially, there's a massive emphasis on where things come from which we in Wales have been very quick to pick up on," she added.

Local restaurateur Rachael Knott also highlighted the change in attitudes towards Welsh cookery, commenting: "Wales no longer needs to be embarrassed about its food and has emerged from its culinary shadow."

Increased focus on the quality of food in the country comes as further good news for those interested in restaurant work, following the boost regeneration in Cardiff gave the hospitality sector.
