Young Highland Chef 2011 winner announced

Euan Walker has picked up the prestigious Young Highland Chef 2011 award after delivering an "outstanding" menu in the finals at Dornoch's Burghfield House Hotel.
The 20-year-old from Inverness began working at the New Drumossie Hotel in 2008, where has was given guidance and instruction from regional executive chef Kenny McMillian.
After being presented with a bag of mystery ingredients at the final, the chef chose a pheasant, fresh mackerel and a brown crab.
He created a starter of mackerel done two ways, a main course of pan-seared breast of pheasant and a double chocolate and whisky souffle for dessert.
Mr Walker explained he felt comfortable with his choice of his ingredients, as his sous chef job at the New Drumossie Hotel typically involves him working with fresh game and seafood.
"Although I felt nervous in the run up, I was confident of my abilities," he remarked.
The chef's efforts won him £500 and one week's work experience at Albert Roux's Le Gavroche restaurant in London.
