The poll, carried out by Caterer and Hotelkeeper, found that two-thirds of people in the sector expect trade to improve in the coming year.

In terms of 2011, 33 per cent of people surveyed reported little change in their business levels while 34 per cent described moderate growth in trade.

The optimistic mood for 2012 is partly down to the Olympics, with 50 per cent of respondents predicting this would have a positive effect on the hospitality sector as more tourists visited London and the surrounding areas.

The new system allows caterers to target particular groups of pupils with price promotions, in the hope it will encourage them to eat a healthier lunch.

Takeaways often offer children cheap lunchtime deals in order to drum up trade, a move these regulations are intended to counteract.

Children's minister Sarah Teather argued that while school meals are healthier than takeaway food, they often struggle to compete for price.

"No longer will schools be tied by complicated red tape, instead they will be able to use their initiative to increase take-up of school meals," she added.

It recorded a 95 per cent like-for-like annual growth in business retention, increasing profits from £38.5 million in 2010 to £78 million in 2011, reports Caterer and Hotelkeeper.

Midlands-based operator Aspens Services has won a total of nine new school and academy contracts, meaning its staff will serve up an extra 1.9 million meals each year from September 2011.

Among the schools where contract catering jobs may be created are St Chad's Catholic and Church of England School in Runcorn, Cheshire, and Wolsgarton High School in Penkridge, Staffordshire.

This is according to the Recruitment and Employment Confederation (REC) and KPMG Report on Jobs for last month.

It revealed that temporary hotel and catering positions had an index reading of 55.1, with anything above 50 meaning that demand increased.

As for permanent hospitality jobs, the index reading was slightly lower at 52.1.

The report also reveals that, in the hospitality industry, the main positions lacking skilled candidates are chef jobs.

Kevin Green, chief executive of the REC, explained that there was an increase in the number of people placed into permanent jobs in June.
